When we were in Suchitoto, a lady purchased a slab of tortilla mix for $0.25 and walked away laughing and slapping the mix into a pancake. Curious, we looked inside and saw this piece of machinery. It was quite the production. If you're in the main square, look for this shop on one of the corners.

The lake isn't fit for swimming. An alternative, if you want a dip, is to use the pools at Hotel El Tejado at 3a Av. Norte, No. 58, located on the left about 4 or 5 blocks from the main square. The hotel serves decently-priced drinks (~$2.50 for a Pilsener), tasty food (their menu --> http://bit.ly/A1jtx5), and there are gorgeous views of the lake. Use of the pools costs $3.25, and you'll have access to an outdoor shower and changing area. This is a higher-end hotel/resort, so prepare to live it up.

One of my favorite things to do in Suchitoto was to get up early in the morning for sunrise (around 5:30). The view of the lake at this time is incredible. Unfortunately, I don't know of any public areas where you can go to watch sunrise. You might check with Hotel El Tejado (they have a fantastic viewing area) and see if it would be possible to enter the property to see it. To get there, head to 3a Av. Norte, No. 58, located on the left about 4 or 5 blocks from the main square.
