Peruvian Ceviche

In Peru, the ceviche, chunks of raw fish marinated in limes and chili peppers, is served on a fish platter, usually with corn and sweet potatoes, but no tomatoes. Peruvian ceviche is noticeably spicier than the kind you get in Ecuador or Colombia. It is insanely good and must be tried before leaving the country. While in Northern Peru, our hostel receptionist suggested we try the ceviche in Pimentel, a town 30 minutes outside of Chiclayo. I'm not sure I would go to Pimentel just to try the ceviche--the town is rather dull--but the ceviche was quite delicious.
